As a result of a divestment, an active ePO server is being transferred to another entity with their own McAfee licenses, and hence a different ePO license key.
What are the potential risks, if any, of updating the license key in ePO to that of the new owner? For arguments sake, if the new license key was related to a grant that had been set up incorrectly for whatever reason, is there a chance that currently deployed and managed security products could be inadvertently affected in this case?

It all depends on any differences in entitlements from one grant to another. YYou can make a copy of your current license key and make note of what is available as licensed in software manager. Then switch it to the new license key and compare the differences (you would have to refresh software manager after new key is added). It may or may not show all your available products or show some as evaluation. As far as clients go, this test won't have any impact on your clients.

Key element was that there would be no impact to managed estate regardless, so thanks for confirming - great call on the software manager check - I will include that as a formal test case on the migration.
