You can have more than one EPO server with same Licensing key. However Licensing is based on McAfee point products/endpoint nodes not on EPO based at all.

You can have more than one ePO with the same license key.
If you want to check the licensing part you can login to the ePO console and under Licensing tab you can check the products you are using with the device count.
Above is the screenshot to check the device count and product count.

As @LKS pointed out, the licensing is for point products. You can set up as many epo servers as you like.

Ok, that's good news. I appreciate you guys are employees, however, I was hoping there was and official resource on the Mcafee website i could reference?

None that I know of. The licensing compliance checks only check for point products installed, not epo servers.
